Spicy Chili Grilled Shrimp with Lemon Herb Rice

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 cup basmati rice
  • 2 cups water
  • 1 lemon, zested and juiced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp butter

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic, chili powder, smoked paprika, cayenne pepper, salt, and pepper.
  3. Toss the shrimp in the marinade and let it sit for 10 minutes.
  4. Meanwhile, rinse the rice under cold water until the water runs clear.
  5. In a pot, bring water to a boil. Add rice, cover, and reduce heat to low. Cook for 15 minutes or until rice is tender.
  6. Remove rice from heat, add lemon juice, lemon zest, parsley, and butter. Fluff with a fork and set aside.
  7. Grill the shrimp for 2-3 minutes on each side until cooked through.
  8. Serve the grilled shrimp on a bed of lemon herb rice.
